RECIPE: Chili Frito Pie | 1/31/19

Ingredients

Chili
1 pound Ground beef
1 whole White onion, small dice
1 medium Serrano (can substitute with Jalapeno), minced
6 cloves Garlic, minced
3 Tablespoons Canola oil
1 – 7 ounce can Diced green chiles, drained
Kosher salt to taste
Black pepper to taste
2 – 28 ounce can Diced tomatoes in juice
2 – 15.5 ounce Kidney beans
1 – 15.5 ounce Chili beans
1 cup Tomato sauce
1 Tablespoon Ground cumin
4 Tablespoon Chili powder
½ teaspoon Celery salt
1 Tablespoon Onion powder
1 Tablespoon + 1 teaspoon Garlic powder
2 teaspoon Taco seasoning

Chili Frito Pie Ingredients
Chili (from above or substitute with canned chili)
2-3 Party Size Bags of Frito Corn Chip Scoops
1 pound Shredded Cheddar Cheese
2 Bunches Green onions, chopped
1 Large whole Sweet or White onion, small dice
1 pound Sour Cream
Salsa (optional)
Hot pickled peppers (optional)

Directions

In a medium stock pot on high heat, add the canola oil, allow to get hot. Add the onions and Serrano chilies, stir intermittently for 3-4 minutes, add the garlic, continue stirring, do not let the garlic burn. Stir for an additional 3 minutes, as the onions become translucent, add the ground beef and break the beef up and continue to stir and brown the meat. Once the meat is browned, add the diced green chiles, stir and add salt and pepper to taste. Add the tomatoes, kidney beans, chili beans and tomato sauce, stir until combined. Add the remaining seasonings, cumin, chili powder, celery salt, onion and garlic powder and taco seasoning. Stir and combine seasonings thoroughly, add salt and pepper to taste. Turn down the heat and allow the chili to simmer for approximately 45 minutes to 1 hour. Feel free to add more or delete the seasonings to make it your own. This can be made a day in advance. Be sure to cool it down properly and store in an airtight container in the refrigerator.

Serving

Prior to serving, if you prepared your chili the day before, re-heat chili and allow to simmer until it’s nice and hot. In small individual serving bowls, put each ingredient for the Chili Frito Pie into its own bowl to create a condiment bar for everyone to create their very own Frito Pie masterpiece. While everyone is busy assembling their Frito pie, you can sit back, relax and enjoy the Big Game!
